Summer Okra Salad

Preparation time:

Ingredients
450g fresh okra, cut into 1/2-inch pieces
400g canned black beans, drained and rinsed
1 large red bell pepper diced
1 x 340g tinned sweetcorn, drained
1 large, white onion, diced
1 teaspoon finely chopped garlic
15-20 cherry tomatoes, halved
1 tablespoon extra virgin olive oil
1 teaspoon cumin
1 teaspoon dried basil
Pinch salt
1/2 teaspoon freshly ground pepper
1 ripe avocado - peeled and destoned
Method:
Add the okra, beans, bell pepper, sweetcorn, onion, olive oil, cumin, basil, garlic, and tomato and ground pepper to a large mixing bowl,
Add olive oil and salt, toss gently until the olive oil is evenly distributed.
Cut the avocado into 1/4-inch pieces and gently toss with the salad.
Serve as a light lunch or healthy snack
